Here’s a great vegan recipe for a quick lunch at work or school. It will last you all week!
3 cans of chickpeas drained and rinsed
1 heart of celery
1 medium size red onion
3 tablespoons of nutritional yeast
3 tablespoons of dijon mustard
1 tablespoon of salt
1 tablespoon of pepper
1. Mash chickpeas with a potato masher leaving a few whole chickpeas. It will start to resemble tuna. (You can use a fork or something other than a potato masher to mash the chickpeas, but it may take longer.)
2. Dice your red onion and celery and mix it in with the chickpeas.
3. Add nutritional yeast, dijon mustard, salt, and pepper and mix!
4. Serve on bread or with crackers!
